You don't release them. You...(shudder, shudder) DRINK them. Sometimes they give you health, sometimes you lose health. Like, one time, I was at three hearts, I drank it, and it replenished me all the way. And another day, I was at almost full, and it brought me down to one. So, my advice is to drink it, but be sure there's plenty of bushes around to replenish your hearts, just in case. (I'm pretty sure it never kills you.)
